Soncini Model DS761P Prosciuto Boning Machine, 16 bar, Pneumatic operation semi automatic machine able to perform the so called sfilato boning of the cured prosciutto ham, a perfect solution in terms of quality and good looks. The machine is a complete combination of efficiency, safe use and very high output. The operator positions the ham on the pneumatic clamp and cuts the skin and meat quite easily, helped in this operation by the variable force divaricating arms. Finally, the bone is automatically pushed upwards by means of a special ejector cylinder.
