Hydraulic Hood, 7 1/2 HP APV Centifugal Pump, Approx 1 in H product ht, 1/2 HP 60 Hz 208-230/460 conveyor drives, S/S filter W/ DC Drive controls, remote mount Controls, Immerso-Cook frying systems are used to process a wide variety of value-added and snack products. Examples of value added products include breaded meat and poultry foods, breaded vegetables, breaded fish and seafood, fruit pies, meatballs, eggrolls, spring rolls, taquitos, chimichangas, etc. Snack products include potato chips, tortilla chips, carrot chips, extruded snacks, pork rinds, cracklins, nuts and any other products cooked in oil. Immerso-Cook direct fired continuous cooking systems offer the latest technology in direct-fired hot oil frying and cooking. The cooking system consists of a pan (cooking vessel), continuous conveyor assembly, hot oil circulation system, controls and heating source. Direct-fired units utilize high efficiency burners with a single small burner tube. Special high temperature joints are used to eliminate tube fatigue from expansion/contraction. Rapid oil turnover is important in maintaining fresh oil and superior finished products. The small burner tube design in the Immerso-Cook unit minimizes oil requirements, thus providing high oil turnover without oil degradation. Customer required temperature profiles such as constant or differential temperatures, are achieved by selecting from various oil circulation and immersion tube designs.
